How We Make Delicious and Crispy Duck Fried Chicken at Home

I can't say I don't eat fried food anymore, because I do...and I love it! So grateful to have flour that doesn't bother me and tallow my dad renders from their cow that they share with us. We definitely have it in moderation, but homemade french fries (I like the red ones because they're lower in oxalates), onion rings, General Tso's, and my hubby's spicy fried chicken, yum! This batch is extra special because we're using duck eggs, so duck fried chicken it is!


Look at those large duck eggs in the bowl! Duck eggs are my favorite eggs, they taste cheesy! Here's a pic of me getting the dry and wet ingredients prepped with thawed, organic chicken thighs from Costco. It's very important to dip the chicken dry, then wet, then dry in that order! It turns out fantastic, every time. Sometimes we make it more spicy, sometimes less (depending on who's joining us), but this is the recipe we follow loosely.

As with anything, the quality of ingredients and love that goes into making the dish matter. My favorite spices take it next level!

I can't quite tell you how or why this picture was dragged into this post, but I think it's because those are duck eggs, lol, so I'm just going to go with it! Plus, it's so pretty with the peonies that lasted forever and my favorite summer pants...especially since it is currently snowing the biggest flakes I've ever seen!
