I didn't want to miss the end of peach season and we made it to Bennett's just in time this year! The peaches are so tasty in smoothies with protein powder (more info coming soon), mixed with mangoes in lassi's, and a new recipe I tried: peach gummy rings.
This is our second year making the trip here for their peaches, but we have been several other times for their apple cider! I saw peach rings online and just had to make them for some reason! I followed this recipe (very loosely). The cooked "sauce" that went into the molds was delicious, but for some reason when they gelled up, they weren't nearly as sweet, so next time I will add more sugar, and more gelatin because they were more sticky than gelly, to me. Also, I was a little disappointed in the mold as it is super flimsy and does not hold its shape, as other silicone molds I've used.
This is the mold I used, as recommended in the recipe link. I think next time I also need to fill them all a little more? It's weird because they are a little thin, but if I fill to the top, the hole won't go through them like a true peach ring, ya know?!
Look how picture perfect these peaches are! I look forward to going back next year and trying more varieties.
They have a stand with other seasonal produce and make fresh donuts in the fall -- theirs are my husbands favorites!
