Like gyros? Shawarma? Cooking for a bunch of people? The Trompo is where it's at! Stacking my meat is not only delicious, but it's also super easy to do! What I refer to as the "trompo" is the dish itself. It's a tray on the bottom with a spear in the middle that the meat gets poked through and slides down on. The tray at the bottom is great for catching the juices and serving from (I'd just take the spear out).
Here's my meat, stacked, and ready to go in the oven:
As I mentioned, cooking with the trompo is so easy, but there are two parts that are important. One: I need to remember to marinate the meat. Ideally I like to do this the day before -- but like to give it at least two to three hours. Secondly, I need to make sure to plan for plenty of time to cook. It's so easy to do after a little prep, just keeping in mind that cooking it takes some time. I like to cook it low and slow and it takes about 3-4 hours - but I'm always sure to temp check it to be safe.
The Trompo King brand of shawarma spice is really tasty and as you can tell from the picture, I use it liberally! I appreciate that it says "No MSG" on the label. Sometimes I also make my own spice mix with whatever I have on hand.
Sometimes we like to top it with half a tomato or onion which is always tasty too (if they're in season) but you can see how everything slices off so easily!
