The first time I had tzatziki, it was made by my colleague, from Greece! I love that she taught me how to make it and how effortless it is.
We love making it with hummus and chicken, but with meat cooked on the Trompo King, it takes things to a whole new level! Read about how I stack my meat here and here.
Here's how I do it:
Start with whatever yogurt I have - sometimes this is goat, sometimes it's sheep, sometimes it's A2 cow from the farm.
Squeeze in fresh lemon juice. I like to get them from Winterwarm farms as they don't use pesticides or wax their citrus!
Add some dill (usually more than I think I need)
A pinch of mint.
And sometimes I add diced, organic cucumbers
I mix it all together - sometimes with a spoon, sometimes with a whisk - either works! If you want a more structured recipe, check this one out.
